History of the Fried Chicken 

All-American fried chicken as we know it is a blend of two different cuisines, one from Africa and the other one from Scotland. African Scottish fusion the timeless combo as far back as the Middle Ages Scottish cooks were frying chickens and fat but since they weren’t using spices the resulting meal was pretty flavorless meanwhile West Africans also had an approach to cooking fried chicken. One That called for batter and a healthy handful of bold seasonings these two approaches made their way stateside and met as Scottish immigrants settled in the deep south. And African slaves serving as cooks how did the seasonings missing from the Scottish dish Fried Chicken steadily grew in popularity because chickens were comparatively inexpensive animal to raise and since Fried Chicken traveled pretty well in the hot southern climate before refrigerators nowadays every chef has their own recipe for fried chicken each one is a sacred text a devout ritual of marinades spice blends and strict prepping and cooking techniques some batches are battered some dredged in flour some boat some sprinkled with paprika cayenne ginger dried mustard others dusted with simple salt and pepper they can be fried in pans deep fryes or pressure cookers. Colonel Rachel’s secret ingredients are 1 tablespoon of paprika, 1 tablespoon of salt, 2 teaspoons of onion powder, 2 teaspoons of garlic powder, 1 teaspoon of dried oregano, 1 teaspoon of dried basil, 1 teaspoon of white pepper, and then last of all 1 teaspoon of cayenne pepper of a kick. Nexxt seal up the bag and give it a shake. Of course, if you’re using a bowl, you’ll just stir it together. Once your coating is ready that means it’s time to fry.

Pour enough vegetable oil or peanut oil into a large heavy skillet. Enough to cover the bottom with about 1 inch or 3/4 of an inch of oil. And gat that heating to 350 degrees Fahrenheit. When your oil is ready for frying you’ll want to remove a piece of chicken from the buttermilk mixture. Fried chicken takes approximately 14 minutes to fry. But of course, that depends on the size of the pieces that you’re cooking. It’s a good idea to use a meat thermometer to ensure 100% accuracy. You want to make sure that chicken is cooked to at least 165 degrees Fahrenheit, add it at about 172 to 175 for dark meat. One of the keys to getting super crispy fried chicken is to monitor the temperature of your oil. It needs to stay between 300 and 350 degrees the entire cooking time.

Once the chicken is done, remove it from the oil and transfer it to a paper towel-lined plate to drain and cool a little bit. You have to wait for 10 minutes before anyone tries to eat it. Otherwise, you might burn your tongue.
